Kabab Koobideh: The Beating Heart of the Persian Table

Few dishes capture the soul of Iranian cooking like kabab koobideh. Made from minced meat seasoned simply with onion, salt, and pepper, it proves that the finest cooking often lies in mastering the essentials rather than crowding the plate.

The secret is in the technique. The meat is kneaded by hand until it turns silky and holds firmly to the skewer, then grilled over glowing charcoal so the outside chars while the inside stays tender and juicy. The aroma alone tells you it is done right.
